1 firm, ripe, papaya
1/2 cup milk
3 tablespoons strained, fresh lime juice
1/2 teaspoon finely grated fresh lime rind
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 cup crushed ice
Thinly sliced lime for garnish
Instructions:
Peel papaya. Cut in half lengthwise and seed. Chop papaya coarsely. Place papaya in blender. Add milk, lime juice, lime rind, sugar, vanilla and crushed ice. Blend at high speed until mixture is smooth and thick (about 20 seconds). Pour into 2 tall glasses.
Garnish with lime slices. Serves 2.
